Caprese Grilled Filet Mignon with Mozzarella, Tomatoes, and Basil
Because Eddie’s on Lake Norman is an Italian restaurant, we love this Italian twist to dress up grilled steaks. Choose filet mignon steaks about 6 to 8 ounces each. Let the meat reach room temperature. (Take it out of the refrigerator about 20 to 30 minutes before cooking.) Preheat your grill to high. Season the meat with pepper and salt and brush with olive oil.
Place the steaks on the grill, cover, and cook on medium-high for about five minutes. Flip and cook for another three to five minutes, until medium-well or desired doneness. Let the meat rest for five minutes. If you like them a little less cooked, reduce your cooking time.
Add Caprese toppings: a one-quarter-inch-thick slice of Roma tomato, a slice of fresh mozzarella, and fresh basil leaves (stems removed) to each steak. Drizzle with a balsamic reduction. Serve with asparagus and roasted potatoes.

Cook 1 8-ounce package of linguine according to package directions. Meanwhile, sauté about 4 cloves of chopped fresh garlic over medium heat in ½ cup unsalted butter with 1 pound of peeled and deveined shrimp for about 3 to 5 minutes. Stir in 1 cup of dry white wine and ¼ teaspoon of ground black pepper. Add juice from 1 fresh lemon and 1 tablespoon of chopped fresh parsley. Mix with drained pasta, then sprinkle it with grated Parmesan cheese.
Marry Me Chicken
With a cute name like this, Marry Me Chicken is a recipe to love. It’s ready to serve within 30 minutes—another “yes” for the home chef!
Season 3 large skinless, boneless chicken breasts, sliced into cutlets, with salt and pepper. Dredge lightly in 6 tablespoons of all-purpose flour, shaking off any excess. In a large skillet, heat about 2 tablespoons of oil and 2 tablespoons of butter to coat evenly.
Brown the chicken on each side, about 4 to 5 minutes per side. Set aside. Saute 3 cloves of minced garlic until fragrant. Add 1 cup of chicken stock, stirring to deglaze the pan. Reduce heat to medium-low; add 1 cup of heavy cream and ½ cup of grated Parmesan cheese.
Simmer for about 2 minutes as you season with 1 teaspoon of chili flakes, ¼ teaspoon of oregano, and ¼ teaspoon of thyme. Add ⅓ cup of chopped sundried tomatoes. Return chicken to pan and simmer as the sauce thickens. Top with chopped fresh basil leaves. Serve over pasta or rice.
Baked Salmon in Foil
Another seafood favorite you might find at restaurants nearby, this salmon dish also works well with fresh sprigs of rosemary.
Preheat your oven to 375 degrees Fahrenheit. In a bowl, combine ½ cup of olive oil, 2 ½ tablespoons of fresh lemon juice, 5 cloves of minced garlic, 1 tablespoon of brown sugar, 1 teaspoon of dried oregano, and 1 teaspoon of dried thyme. Add pepper and salt to taste.
Place a large piece of aluminum foil on a baking sheet and brush it with olive oil. Place one 3-pound salmon fillet in the center. Drizzle the olive oil mixture over it. Fold the foil over the salmon to create a packet, then seal the edges. Bake for about 20 to 25 minutes, or until the fish flakes easily. Garnish it with lemon slices and fresh parsley, then serve your salmon with rice and steamed vegetables.
Easy Chocolate-Covered Strawberries
OK, they’re not for dinner, but we couldn’t help but include this Valentine’s treat. Use baking chocolate for best results.
In a double boiler over simmering water, combine ½ cup of semisweet chocolate chips and ½ cup of milk chocolate chips, stirring frequently with a rubber spatula until melted (about 3 to 5 minutes). Remove the pan from the heat, then stir in another ½ cup of each kind of chocolate chip.
Line a baking sheet with wax paper. Wash and dry about 16 ounces (one pound) of fresh strawberries. Hold each by the stem as you swirl it through the chocolate, coating it evenly. Arrange them on the wax paper. Chill them or let them rest until the chocolate sets (about 2 hours).
