1. Chicken Pot Pie

There’s nothing like sitting down to a plateful of classic chicken pot pie on a cold winter day. You don’t need to reinvent the wheel or create something extraordinary for dinner. With a few leftovers, you can whip up this dish in 15 minutes and have it on the table in about an hour.

Here are the ingredients you’ll need:

  • Butter (4 tablespoons)
  • Finely diced onions, carrots, and celery (1/2 a cup each)
  • Shredded, already-cooked chicken or leftover turkey (3 cups)
  • Chicken broth (3 cups)
  • Flour (1/4 cup)
  • Turmeric (1/4 teaspoon)
  • 1 egg
  • 1 unbaked pie crust
  • Water (2 tablespoons)
  • Cream or half-and-half (1/4 cup)

We recommend adding salt and pepper to taste. You can also chop up some fresh thyme and add that for a warm, bright flavor

2. Slow Cooker Broccoli Cheese Soup

This recipe will take a bit longer than others, but it’s worth the extra wait. Broccoli cheese soup is an easy recipe to make with a slow cooker and will satisfy you like few other foods can. Prep time only takes about five minutes—it takes another four to five hours for your slow cooker to do its thing.

As far as ingredients, here’s what you’ll need:

  • Frozen broccoli florets (1 pound)
  • 1 medium onion, diced
  • 2 finely diced carrots
  • Chicken broth (5 cups)
  • Cream of celery soup (2 cans)
  • Salt (1/4 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Cayenne pepper (1/8 teaspoon)
  • Processed cheese (1 1/2 pounds)
  • Sharp cheddar cheese, grated (2 cups)

Bon appetit!

3. Skillet Macaroni and Cheese

Are you looking for the best dinner recipes for the whole family? Look no further than skillet-cooked mac-and-cheese. You can find this dish at Eddie’s on Lake Norman: it’s a go-to comfort food.

Making mac-and-cheese in a skillet takes about 30 minutes and requires little experience in the kitchen. You’ll need the following ingredients:

  • Uncooked elbow macaroni, shells, or cavatappi (2 cups)
  • Butter (2 tablespoons)
  • All-purpose flour (2 tablespoons)
  • Half-and-half (1 1/2 cups)
  • Processed cheese (3/4 pounds)

To add your own pizazz to this recipe, consider adding chopped cherry tomatoes and ground pepper. You can also add fresh arugula.

4. Air Fryer Chicken Parmesan

If you don’t feel like going out for dinner on Lake Norman but want a delicious meal, you can’t go wrong with chicken parmesan. With an air fryer, you can pull together this classic cheesy, crispy Italian dish in just minutes. After some prep time, you can eat in about 30 minutes.

What ingredients do you need to make one of these all-time best dinner recipes?

  • Boneless, skinless chicken breasts (4 horizontally halved cutlets)
  • Salt (1 teaspoon)
  • Ground black pepper (1/2 teaspoon)
  • All-purpose flour (1/3 cup)
  • Garlic powder (2 teaspoons)
  • 2 large eggs, beaten lightly
  • Breadcrumbs (1/2 cup)
  • Ground parmesan cheese (1/4 cup)
  • Italian seasoning (1 tablespoon)
  • Marinara sauce (1 cup)
  • Mozzarella cheese (4 slices)

You’ll also want nonstick cooking spray to keep the chicken from falling apart when you pull it out of the fryer.

5. Beef-and-Bean Chili

Nothing makes you feel more at home during a North Carolina winter than a steaming bowl of homemade chili. This beef-and-bean chili recipe will fill you up fast and warm you straight down to your toes. However, you’ll want to plan ahead because this recipe requires about two hours before it’s ready.

You’ll need the following ingredients to make our beef-and-bean chili dish:

  • Ground beef (4 pounds)
  • Kidney and pinto beans, drained and rinsed (4 15-ounce cans)
  • 6 garlic cloves, minced
  • Tomato sauce (2 8-ounce cans)
  • Tomato paste (1 6-ounce can)
  • Chili powder (1/4 cup)
  • Ground oregano, ground cumin, and salt (2 teaspoons each)
  • Cayenne pepper (1/2 teaspoon)
  • Corn flour or regular cornmeal (1/2 cup)

Include shredded cheddar cheese and crumbled bacon as a topping to bring out the extra flavor, or add sliced jalapeños for extra oomph.

About Eddie’s on Lake Norman

Ann-Margaret Wagner brings her hospitality and restaurant expertise from New York to the shores of Lake Norman with Eddie’s On Lake Norman. Ann-Margaret is the former owner of a successful restaurant in Westchester County, New York, called The Muscoot Tavern, an iconic “Cheers-like” bar and grille. After visiting Lake Norman, she fell in love with the area, saw potential in the restaurant, and decided to make North Carolina her new home with her daughter Lacy.

After purchasing the business, which was previously Vinnie’s Sardine Grille and Raw Bar, she completely renovated the entire space, sold the other restaurant, and moved south. The kitchen is filled with all new appliances, while the bar, dining room, and back patio were all touched up to create a clean, comfortable and relaxed atmosphere. Whether in North Carolina, New York, or anywhere else, Ann-Margaret’s mission is always to provide the freshest seafood, prime meats, produce, pasta, and bread, every meal.

“I hope you enjoy eating our delicious cooking as much as we love making it for you!”
